Inside the ancient walls, the guests can discover the flavours of the past in the creative and traditional dishes prepared by the owner with the genuine products of the farm; among them the truffles, which are cultivated according to biological farming methods.

The company cultivates about 200 olive trees, extracting an oil low in acidity while rich in monounsaturated fatty acids and antioxidant substances, with a pleasant fruity aroma. The olives are hand picked, stone ground, extraction is mechanical at low temperatures. This oil gives an unmistakeable flavour to cooked dishes and to vegetables biologically grown in our “vegetable plot” that are always fresh-picked for preparing rich salads and tasty soups.

Our sheep are the Apennine and Suffolk breed; they produce a highly prized, low-fat meat used for preparing the following:

Every morning the Elmo oven turns out loaves of homemade bread, bread with olives and bread with nuts.
